Paleo curried eggs with rocket

This paleo curried eggs dish is quick and easy, especially if you keep a view hard-boiled eggs in the fridge like I do for a quick lunch or emergency protein pack.

It adds something a bit different to the normal flavour of eggs and includes some leafy green leaves – an important staple of the paleo diet.

  1. Peal the eggs. Cut in half. Remove the yolks into a small mixing bowl.
  2. Add the curry powder and mayo into the yolks and mix will.
  3. Place a good handful of rocket on a plate. Add the empty egg white to the plate.
  4. Carefully spoon the curried egg yolk mix back into the eggs.
